Crockpot beef recipes - hamburger, short ribs, and chili all work well in the slow cooker. These are hearty meals for the family and these basic recipes can be modified in any number of ways to make a totally different look and taste. When cooking nothing is ever etched in stone, change things, experiment with spices and herbs and soon you will be able to adapt any recipe to fit your own tastes and needs.

Crockpot Hamburger Casserole Recipe
A hamburger casserole recipe with potatoes, carrots, peas and onions and tomato soup.
INGREDIENTS:

    2 large potatoes, sliced
    2 to 3 medium carrots, sliced
    1 cup frozen peas or 1 can of peas, well drained
    1 cup chopped onion
    2 ribs of celery, sliced
    1 1/2 pounds lean ground beef, browned and drained
    1 can condensed tomato soup
    1 soup can of water


Layer vegetables in order in slow cooker/Crock Pot; season each layer with salt and pepper. Put the browned ground beef on top of the celery. Mix the tomato soup and water, pour over the layers.
Cover and cook in crockpot on LOW for 6 to 8 hours, stirring occasionally.


Chili

    1 lb. ground beef, browned and drained of fat
    1 lb. beef stew chunks, cut small (bite-size)
    1 can red kidney beans
    1 can pinto beans
    1 large can stewed or cooked tomatoes
    1 can condensed tomato soup
    1/4 cup water
    1 small onion, diced
    1 large green pepper, diced
    1 teaspoon garlic powder
    1 tablespoon chili powder
    1/2 teaspoon salt
    1/2 teaspoon crushed red pepper flakes (hot)
1/4 teaspoon black pepper
PREPARATION:
Combine all ingredients in crockpot; mix well. Cover and cook chili on low about 8 hours, or until the beef chunks are very tender and fall apart easily. Add more water if you like your chili thinner.

Great meal when serve with hot cornbread or crackers. Enjoy!


Three Bean Chili

INGREDIENTS:

  2 tsp. vegetable oil
  1 1/2 lbs. ground beef
  1 sm. onion, chopped
  1 clove finely chopped garlic
  1 (16 oz.) can red kidney beans
  1 (16 oz.) can pinto beans
  1 (16 oz.) can Great Northern beans
  1 (15 oz.) can tomatoes
  1 (15 oz.) can tomato sauce
  2 tbsp. chili sauce (optional)
  1 tbsp. chili powder
  1 tsp. salt


Brown and drain ground beef. Drain and rinse all beans. Add remaining ingredients to slow cooker. Cover and stir occasionally. Put on low heat, can be fixed ahead and left on all day.


Crockpot Short Ribs

INGREDIENTS:

   4 to 5 pounds beef short ribs
   1 can (14.5 ounces) diced tomatoes
   1 medium onion coarsly chopped
   1 cup beef broth
   1/4 cup red wine
   1 tablespoon dried minced onion
   1 teaspoon salt
   1/4 tsp ground black pepper
   1/4 tsp ground ginger
   2 tablespoons cornstarch
   1 to 2 tablespoons cold water


Brown short ribs in large skillet, drain off any fat. Place ribs into crockpot and add remaining ingredients.   Cover and cook on LOW for 6 to 8 hours. Increase temperature to HIGH.


Remove beef ribs from crockpot and remove excess fat.  Serve gravy over the short ribs.
Serves 4 to 6.



Crockpot Beef for Tortillas

Another great filling forTortillas
INGREDIENTS:

    1 1/2 pounds beef round steak
    2 large cloves garlic, minced
    1 teaspoon salt
    1/4 teaspoon pepper
    2 tablespoons lemon or lime juice.
    3/4 cup chopped onion
    1 cup shredded carrots
    1 can (4 ounces) chopped green chile, optional
    1 teaspoon chili pepper
    1/2 cup beef broth
    1 can (14.5 ounces) diced tomatoes


Spread garlic on round steak; sprinkle with salt and pepper. Sprinkle evenly with lemon or lime juice; place meat in slow cooker then add remaining ingredients. Cover and cook on LOW setting for 8 to 10 hours, until meat is very tender.



Shred serve with rice and warm flour tortillas.
Serve with chopped shredded lettuce, chopped onions, diced tomatoes, salsa, cheese, sour cream and guacamoli. Makes about 8 to 10 servings as tortilla filling.


Crockpot Spanish Rice

INGREDIENTS:

    2 lbs. ground chuck or beef round
    1 medium chopped onion
    1 green bell pepper, chopped
    1 (28 oz.) can stewed tomatoes
    1 (16 oz.) can tomato sauce
    1 can black olives, drained and coarsly broken
    1 1/2 c. water
    1 tablespoon chili powder (or to taste)
    1/2 tsp. red pepper flakes if you want a bit more zest.
    2 tsp. seasoned salt (to taste)
    2 tbsp. Worcestershire sauce
    2 c. raw rice, converted
    2 ribs celery, chopped
    shredded Monterey Jack or Cheddar cheese (optional)


Brown beef in skillet and drain well. Combine all ingredients in Crockpot and stir well. Cover and cook on LOW for 5 to 7 hours or on HIGH for about 3 hours.
Sprinkle with shredded cheese just before serving.
