Curry Chicken
4 to 6 chicken breasts, boneless, skinless
1/2 cup flour
1 teaspoon curry powder
1 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil
1 can cream of mushroom soup
1 can mushrooms (4 ounces or more - or use fresh)
2 tablespoons lemon juice
1 teaspoon Kitchen Bouquet
Mix dry ingredients in a plastic or paper bag. Add chicken breasts and toss to coat. Brown quickly in hot olive oil over medium high heat.
Place browned chicken into crock pot.
Mix remaining ingredients and pour over chicken. Cover and cook on low for 6 to 8 hours.
Serve with brown rice.
SouthWest Chicken
INGREDIENTS:
1 can (15 oz) black beans, rinsed and drained
2 cans (15 oz) whole kernel corn, drained
1 cup bottled thick and chunky salsa, your favorite
5 or 6 skinless, boneless chicken breast halves (about 2 lbs)
1 cup shredded Cheddar cheese
In your slow cooker, mix together the corn, black beans, and 1/2 cup of salsa. Place chicken breast in top and pour the remaining 1/2 cup salsa over the chicken. Cover and cook on HIGH for 2 1/2 to 3 hours, or until the chicken is tender and the flesh is white. Do not over cook or the breast meat will be dry.
Sprinkle cheese over chicken, cover and serve when cheese has started to melt.
Serve with warm Tortillas
Creamy Italian Chicken
Serve this flavorful crockpot chicken recipe over rice or noodles.
INGREDIENTS:
4 boneless skinless chicken breast halves
1/3 cup low fat bottled Italian dressing -.your choice.
1 can (10 3/4 ozs.) condensed cream of chicken soup.
1 - 8 oz. package cream cheese, softened
4 ozs. sliced fresh button mushrooms or
canned drained sliced mushrooms may be subsiituted. (4 ozs.)
Hot cooked rice or noodles
Place the chicken breast halves in a slow cooker. Pour salad dressing over chicken. Cover and cook on LOW for 3 hours.
In a small mixing bowl, mix cream cheese and soup until blended.
Add mushrooms into mixture then pour cream cheese mixture over chicken. Cook another 1 to 3 hours longer or until chicken juices run clear.
Serve this easy Italian chicken with hot cooked noodles or rice. For a complete meal add a fruit salad and whole wheat roll.
