Casseroles can make a simple no fuss meal.  Quick to assemble and then you let the oven do the rest. This type if dish is versatile and usually the recipe can be modified in numerous ways depending on your families needs and tastes.
Beef, pork, chicken and hamburger are all meat options or casseroles can be assembled meatless with items as such as cheese and veggies. Fat free, meat free, whole grain or any way you want them casseroles can't be beat.

Sausage Rice Casserole

Ingredients:

1 pound of sausage. ( spicy Italian sausage, regular breakfast sausage or lean ground pork can be used and seasoned to taste or needs.)

1 medium onion diced
3 to 4 Oz of sliced fresh mushrooms or substitute 1 small can mushrooms, stems and pieced

1/2 cup green pepper diced
1/2 cup celery diced
1/2 cups uncooked brown rice...white rice may be substituted.
1/2 cup water
1 can chicken broth or substitute

Preparation:
Brown sausage in large skillet. Remove and set aside. retain about 2 table spoons drippings, saute pepper, celery, onions and mushrooms for approximately 2 minutes add sausage and mix.

Place ingredients into greased baking dish.

Bake approximately 1 hour at 350 degrees.

Serves 4


Sausage and Potatoes

Ingredients:


1 pound sausage
4 cups peeled, sliced potatoes
1 small can sliced mushrooms
1 can cream of mushroom soup
1 1/2 can water
¼ tsp pepper.

Make sausage into 6 to eight small patties. Place in fry pan and cook until nicely browned on both sides, drain well and set aside. 

Place 4 cups sliced potatoes placed in the bottom of baking dish. Over potatoes scatter one can of drained mushroom stems and pieces. Top with patties.
Combine soup mix, water and pepper together and pour over the layered meat and potatoes.
Cover with foil and bake at 350 for approximately 45 minutes

Serves 4

Chicken and dressing casserole

Ingredients:

2 whole skinless boneless chicken breasts (4 pieces when split)
1 bag herb seasoned stuffing mix

1 can cream of mushroom soup
1 - 6 ounce can mushroom pieces
2 cups chicken broth
¼ tsp pepper
¼ tsp chili powder


Preheat Oven to 350 degrees

Place chicken in sauce pan cover with water. Bring to a boil then reduce heat and simmer for 30 minutes or until tender .Remove chicken from broth, (save broth).
Place the stuffing mixture in bottom of pan. Layer chicken breast pieces evenly on top of the stuffing mixture. In a medium bowl combine the soup, mushroom pieces, broth and pepper. Mix well and pour evenly over top of the chicken.

Bake 40 minutes at 350 degrees

Serves: 4
