Chicken is ideally suited for cooking in a crockpot. In the first recipe it is combined with garden vegetables to produce a complete meal which only needs a roll and a light desert to make it a perfect dinner for the family.
BBQ Chicken ....Simple way to cook chicken for BBQ sandwiches.

4 Chicken breast halves - bonless - skinless
1/4 cup water.
1 cup of your favorite BBQ sauce.

Place  2 chicken breast halves in crock pot that you have added water into - pore 1/2 cup of BBQ sauce over breast meat. Place remaining  pieces of breast into pot and cover with remaining sauce.
Cover and set on low temperature. Cook 9-10 hours.
For sandwiches remove meat and shred with fork then return meat to the sauce.
Great on a bun or in a peta pocket.
This is enough to make 6 nice sandwiches.

Chicken Vegetable Soup

1 cup left over baked chicken or 1/2 raw breast meat cubed.
2 quart of chicken broth
2 stalks celery chopped
1 small onion chopped
1 cup frozen vegetables
1 can white beans, drained and rinsed
1/2 tsp chili powder


cook 8 - 10 hours on slow
Salt to taste
fresh ground pepper - to taste


Wonderful soup for a cold winter meal. Serve with toast and salad.
